I had the pleasure of receiving a plate of these from a friend the other day. I would say I am in to muffins, but not totally- I can typically take 'em or leave 'em. THESE muffins were simply addictive though! I literally ate the whole plate by myself. My husband asked where they went- I had to admit to eating them all!!
I am thoroughly enjoying all things holiday right now! I am hosting Thanksgiving at my house this year and I am so excited! I have so many fun ideas to try and make this Thanksgiving wonderful for our family that will be joining us- I hope to share them soon. To start though- I HAD to share this recipe! It truly is divine! They are soft, moist, with a hint of chocolaty deliciousness!! I made a couple baskets for some friends I met for lunch yesterday...the rest I ate myself!! I also found Carson sneaking the batter behind the kitchen island... he's my little sneaker who loves to help me bake!
Pumpkin Chocolate Chip Muffins
2 c sugar
1 16oz can pumpkin
1 1/2 c vegetable oil
3 c flour
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon1 tsp salt
1 1/2 c chocolate chips
In a large mixing bowl, beat eggs, sugar, pumpkin & oil until smooth. Combine flour, baking soda, baking powder, cinnamon & salt; add to pumpkin mixture and mix well. Fold in chocolate chips.
Fill greased or paper-lined muffin cups 3/4 full. Bake at 400 for 16 min our until muffins test done. Cool in pan 10 min before removing to a wire rack. Makes 24-36 muffins.
